As always we give you all of the recipe and none of the gluten.
Bar:
1 C butter
1 C sugar
1 egg
1 Tbsp. vanilla
1 tsp. almond extract
3 C Great Value gluten-free flour*
1 tsp. baking powder
½ tsp. salt
1 tsp. heavy whipping cream
Frosting:
½ C butter
3-4 C powdered sugar
1 Tbsp. vanilla
½ tsp. salt
1-2 Tbsp. heavy whipping cream
Directions:
Prepare a baking dish with cooking spray; best sizes are 8X8 or 8X6.
In a mixing bowl, cream together the butter and sugar until light and fluffy. Mix in the egg, vanilla, and almond extract and cream until incorporated.
In a separate bowl, add all the dry ingredients together and whisk. Add the dry ingredients to the wets mix until incorporated. Add in the heavy whipping cream and mix until just incorporated.
Place the dough into your prepared pan and, using parchment paper, press it down evenly. Place the dough into the fridge for 30-60 minutes.
5 minutes before you’re done resting the dough, preheat your oven to 350 ˚F. Remove the dough from the fridge and bake for 23-28 minutes or until the edges begin to brown. Allow the bars to cool completely before topping with frosting.
While the bar is cooling, combine the butter, salt, and vanilla in a mixing bowl and cream together. Add in the powdered sugar 1 cup at a time until you reach your desired taste and consistency. You can add heavy whipping cream to add creamy flavor and soften your frosting if it is too stiff. Top the bars once cooled and add fun sprinkles! ENJOY!
*We always use our favorite Gluten Free flour by Great Value at Walmart. We've tried them all to find the best, so you don't have to.
