As always we give you all of the recipe and none of the fluff.
INGREDIENTS
¾ C Butter
1 C Sugar
1 Egg
¼ C Molasses
1 tsp. Cinnamon
1 tsp. Ginger
1 tsp. Cloves
1 ½ tsp. Baking Soda
1 pinch Salt
½ tsp. Vanilla
2 C Great Value GF Flour* (plus 1-2 Tbsp. if you would like more puffy cookies)
Sugar/Sugar crystals for decoration
Optional: White Chocolate
DIRECTIONS
Using a hand/standing mixer, cream together the butter, sugar, egg, molasses, spices, baking soda, salt, and vanilla until well incorporated. Fold in the flour or run the mixer on lowest setting until just combined; add extra flour if you want the cookies to be puffier. Move dough to the refrigerator for 1 hour or longer.
Once the dough has had time to absorb moisture and firm up, remove it from the fridge, scoop out individual cookies, and roll each cookie in sugar, with colored sugar crystals to be extra festive! Preheat your oven to 375°f. Once preheated, place your cookies on a prepared cookie sheet 2 inches apart. Bake for 9-12 minutes; it depends on your oven but wait until they start to brown on the edges and get cracks on their skin. Let the cookies cool completely; they are delicate and can easily fall apart until they have had time to set up and cool.
Optional: Drizzle or dip in white chocolate for extra yummy flavor and really cute presentation.
*We always use our favorite Gluten Free flour by Great Value at Walmart. We've tried them all to find the best, so you don't have to.
