Gluten Free Banana Bread

As always we give you all of the recipe and none of the gluten.

Ingredients

2 C Great Value Gluten Free Flour*

1 tsp. baking soda

1 tsp. salt

½ C shortening

1 C sugar

1 C mashed bananas

1 tbsp. vinegar + milk to make ½ c



Directions

Heat oven to 325 F and prepare a loaf pan with grease and parchment paper (1 regular size loaf or 4 small ones)


In a standing mixer or using a large bowl and hand mixer, cream shortening and sugar together. Add eggs and mix until fluffy and combined. Set aside.


In a separate bowl mix the dry ingredients together (GF flour, baking soda, and salt). Set aside.


In another separate bowl, mash the bananas (1 cup is about 2 bananas mashed.) Set aside.


Finally, measure out the vinegar and milk mixture.


In the bowl with the sugar and shortening mixture add in half of the flour mixture, half of them mashed bananas, and half of the milk mixture. Give it a mix and then add in the second half of the ingredients mentioned above. Mix until combined (don't forget to scrape the edges of the bowl)!


Pour the mixture into the prepared loaf pan. Bake for 45-60 minutes. (If you’re using mini loaf pans, check the bake at 25 minutes.) You know the bread is baked when a knife or toothpick comes out clean after a poke to the center of the loaf.
