GF Peach Cobbler

As always we give you all of the recipe and none of the fluff.


FILLING

2-4 lbs. Peaches (The more peaches, the better)

1 ½ C Sugar

1 tsp. Vanilla

2 tsp. Molasses

1 Tbsp. Cinnamon

½ tsp. Nutmeg

¼ tsp. Ginger

¼ tsp. Cloves

¼ tsp. All Spice

½ C Water

TOPPING

2 cup GF Great Value all-purpose flour*

1 Tbsp. baking powder

1/2 tsp. Salt

⅓ C Milk

3/4 C Sugar

2 Tbsp. Brown Sugar

6 Tbsp. Butter + more to break up on top

2 tsp. Cinnamon

½ tsp. Nutmeg

¼ tsp. Ginger

¼ tsp. Cloves

¼ tsp. All Spice


DIRECTIONS

1. Slice peaches and put into a large saucepan with all other ingredients. Boil peaches for 10-15 minutes until aromatic, tender, and sauce has thickened to a syrup/honey viscosity.

2. Preheat the oven to 375°F. Add all topping ingredients, minus butter, in a bowl and mix together. Using slightly softened butter, add butter into the mixture and work dough with hands making sure not to over mix; you should end up with clumps to drop on top. Don’t use a mixer or hand mixer or it will turn into a paste or very small pieces.

3. Pour peach mixture into a 9x13 pan. Top with topping mixture until peaches are covered. Bake for 40-60 minutes; the topping should be golden brown and the peaches should be bubbling. Remove from the oven and cool slightly before serving; serve with pure, unwhipped heavy whipping cream on top or your favorite dairy alternative. ENJOY!!


*We always use our favorite Gluten Free all purpose flour by Great Value at Walmart. We've tried them all to find the best, so you don't have to.
